Cherry Creek Sneak

Recovery Day: 
Only a couple aches and pains today.   Sean and I rode our bikes to church this morning (http://www.l2today.com) and led run club there.  It was an accidental brick workout; our legs did feel a little tight on the run but warmed up quickly. We then rode to cheer for our friends running the Cherry Creek Sneak.  Then we went to a post-race party and rode home.  We ended up cycling about 22 miles and running 3.6 miles.

We also had our first exposure to Rossiter Stretching from some friends. It is basically a system of deep tissue massage and stretching.   Pretty painful when they are doing it, but we felt great after.

For dinner we made sprouted lentil tacos. 
I learned to sprout lentils from my awesome Indian roommates. My cooking is never as good as their was, but I still try.  Very few Americans know how to cook dried beans or to sprout anything.  They tried to teach me how to cook legitimate Indian food, but it usually started with an Indian spice that they only knew the name of in Hindi.  They never used recipes and never measured anything and most of the spices were mailed to the US from their mom.   They did leave me with a love of cumin, curry, legumes, vegetarian food, and millions of great memories.

Sprouting lentils is very simple.  All you do is soak the dried lentils or dried beans for 12-24 hours.  Then you just drain the lentils.  I usually let them sprout on a colander and rinse them twice a day.  These have been growing for about 4 days.

One funny memory of the awesome roommates is when they let me tried to sprout split lentils.  They didn't want to offend me, so they didn't tell me that you can't sprout split lentils.  They let it go until the house smelled like rotting fish with no sprouts whatsoever. 

Sprouted Lentil Tacos:

  • chopped peppers
  • chopped yellow squash
  • garlic
  • sprouted lentils
  • canned tomatoes with green chiles
  • taco seasoning
  • tortillas
  • cheese
  • chopped lettuce
  • sour cream
We sauteed the peppers, squash, and garlic. Then we added the lentils and drained tomatoes until heated and added taco seasoning and assembled the tacos.   

As you can see, I don't really measure anything either, so I have no room to talk about their unteachable recipes.

Collegiate Peaks Trail Race


Beautiful trail race in Buena Vista (25 or 50 mile). I wonder where they got the name.

This was Sean's first trail race of the season in preparation for the Leadville 100 in August.  I tried to register, but the race was sold out, so I went for a 23 mile photo shoot/run instead.

I met two new trail running friends along the way.  They joined me after I ran by their house. One of them even ran 10 miles with me. 
 Here is Sean at approximately mile 18 or 19.  He was still smiling as usual and my plans to run with him to the finish were foiled by my fatigue and his lack there of.

Overall: The race started at 8000 feet of elevation and peaked at 9400 feet at mile 18 or 19.  It was a beautiful well organized race on an awesome course.
